Here is a little quick healthy recipe we use A LOT at the Blue household. Take some eggs 3-4 utilize whites instead of yokes to help lower fat content if you like. Then throw in some fresh baby spinach. Toss in a little bit of shredded cheese, followed up with some sliced turkey and pepper to taste. There, you got yourself a quick, healthy breakfast in about 5 minutes. Okay, 7 minutes with cleanup. I added a little clementine to seal the plate appeal. There you go. That is our breakfast about 3-4 times a week. Add toast or turkey bacon depending on your diet and calorie intake desires. This is a great way I have found to get Spinach into our diet. ....Soon to come: Baby Spinach Salad Surprise.
